Mauro Musso produces tiny batches of whole grain pasta from Italian-grown wheats milled by Mulino Marino. Each season he tests each variety of flour to determine which types he will use for his pasta. We carry his Casarecce made with white rye, Casarecce made with Senatore Cappelli flour and his Tajarin - a Piedmont specialty made with eggs and whole grain Enkir flour. Limited quantities.
