Jean Marie Cornille Extra-Virgin Olive Oil

This olive oil seems made for the warmer spring months. Luscious, buttery, golden and elegant, this fine oil has a cult following. Drizzled over tomatoes or soaked into the crust of rustic bread, the complex flavor conjurs the lavender covered hills of Provence. The the oil mill of the olive-growing co-operative of the Vallee des Baux was built in 1600-1620 during the reigns of Henri IV and Louis XIII. Called "Moulin Jean-Marie Cornille" in honor of theĀ long time managerĀ of the cooperative, this mill is considered the most prestigious in the valley. 5 varieties of olives are used and are pressed between two granite stones to form a paste that is pressed only once- a single cold pressing. The resulting oil is greenish-golden in color and uniquely sweet and fruity.
