Apiculteur Herve Mercadier produces honey outside of the city of Montauban in the Midi-Pyranees of France.  Tilleul honey is made from the flowers of the Linden tree and is unlike any other honey we've tried! Compared to other tilleul honeys, this one is more robust and intense. Almost eucalyptus in flavor, this honey sparkles with bright and tangy notes of eucalyptus and lime. You could say it tastes like Chenin Blanc. We adore this honey on most every goat cheese.
